Here is a simple, quick and easy recipe for some nice banana pancakes.
If you’re looking for a “treat” style breakfast without the guilt this recipe is for you!!
- 1/2 cup of almond flour
- 1 scoop whey protein (if you have it cool, if not no worries..not 100% necessary for this recipe)
- 1 teaspoon baking soda
- 2 teaspoons cinnamon
- 1 large banana, mashed
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup unsweetened almond milk (or milk of choice)
Preheat a non stick pan over medium-low heat.
In a large mixing bowl or bullet blender, mix/whisk/blend together all of the pancake ingredients until you have a smooth batter.
spray the pan with non stick low cal spray, butter or coconut oil, and use a 1/4 cup measuring cup to scoop the batter onto the pan. Cook the pancakes for 2-3 minutes on the first side, then flip and cook for another 2 minutes. Continue with the rest of the batter.
